While I am one of those people, I do agree that the mere fact alone that
Chromium has been under so much fire means it's too risky to include
Chromium directly. Either using Iridium or Ungoogled-Chromium would be
my suggestion.

I would, however, like it if whichever project we choose (Iridium or
Ungoogled-Chromium), that it be very careful about making sure that
everything in Chromium is free. This may be a difficult task considering
how fast Chromium's development is, however I believe that having
outdated versions of Chromium is not as bad as having a non-free
Chromium that nobody noticed.
